It is also a highly customizable cocktail, with various recipes calling for orange bitters, various vermouths, or even absinthe. During the Prohibition, the Manhattan was made with the only whiskey available, Canadian whiskey. Since those dark, dry times, bartenders have dabbled in Tennessee whiskey, whiskey blends, and bourbon.
