    Be careful while eating spinach

    ചീര കഴിക്കുമ്പോള്‍ സൂക്ഷിക്കണേ..
    പോഷക സമ്പുഷ്ടമായ പച്ചക്കറി എന്ന നിലയ്ക്ക് ചീരയ്ക്ക് വലിയ പ്രാധാന്യമാണുള്ളത്. എന്നാല്‍ ചീര ഉപയോഗിക്കുന്നവര്‍ അറിഞ്ഞിരിക്കേണ്ട ചിലതുണ്ട്. പെരുഞ്ചീര, മുള്ളന്‍ചീര, ചെഞ്ചീര, ചെറുചീര, പാലക് തുടങ്ങി വിവിധ തരം ചീരകളുണ്ട്. പല വലിപ്പത്തിലും നിറത്തിലുമുള്ള ചീരച്ചെടികളുണ്ട്. 100 ഗ്രാം (3.5 oz) ചീരയില്‍ 23 കലോറി ആണുള്ളത്. ഒപ്പം പല വിറ്റാമിനുകളുടെയും ധാതുക്കളുടെയും നല്ല സ്രോതസ്സാണ് ചീര. ചീര വളരെ പോഷകഗുണമുള്ളതാണെങ്കിലും ചിലര്‍ക്ക് ചീര കഴിക്കുന്നത് കടുത്ത ആരോഗ്യ പ്രശ്നങ്ങള്‍ ഉണ്ടാക്കും. കിഡ്‌നി സ്റ്റോണ്‍ ഉള്ള വ്യക്തികള്‍ ചീര കഴിച്ചാല്‍ ചീരയില്‍ അടങ്ങിയിട്ടുള്ള കാത്സ്യം ശരീരത്തില്‍ കൂടുതലായി എത്തിക്കുകയും അതുവഴി രോഗം വഷളാവുകയും ചെയ്യും. ചീരയില്‍ വിറ്റാമിന്‍-കെ ധാരാളം അടങ്ങിയിട്ടുള്ളതിനാല്‍ രക്തം നേര്‍പ്പിക്കാന്‍ (ബ്ലഡ് തിന്നിങ്) മരുന്നുകള്‍ കഴിക്കുന്നവര്‍ കരുതലോടെ വേണം ഇവ ഭക്ഷണത്തില്‍ ഉള്‍പ്പെടുത്തേണ്ടത്. ചീരയില്‍ ഉയര്‍ന്ന അളവിലുള്ള നൈട്രേറ്റ് അടങ്ങിയിട്ടുണ്ട്. ഒരുവട്ടം വേവിച്ച ചീര വീണ്ടും ആവര്‍ത്തിച്ച് ചുടാക്കുന്നത് ഈ നൈട്രേറ്റുകളെ, നിട്രേറ്റ് ആക്കി മാറ്റുന്നു. ഇത് പല ആരോഗ്യപ്രശ്‌നങ്ങള്‍ക്കും വഴിവെക്കാം. അതിനാല്‍ മുലയൂട്ടുന്ന അമ്മമാര്‍, ഗര്‍ഭിണികള്‍, കുട്ടികള്‍, പ്രായമായവര്‍, മറ്റ് അസുഖങ്ങള്‍ ഉള്ളവര്‍ തുടങ്ങിയവര്‍ പാചകം ചെയ്ത ചീര പലയാവര്‍ത്തി ചൂടാക്കി കഴിക്കരുത്. മാര്‍ക്കറ്റുകളില്‍ നിന്നും വാങ്ങുന്ന ചീരയില്‍ കീടനാശിനികളുടെ സാന്നിധ്യം കാണുമെന്നതിനാല്‍ വെള്ളവും മഞ്ഞളും ഉപയോഗിച്ച് നന്നായി കഴുകി മാത്രമേ ഉപയോഗിക്കാവൂ.

    Servings - 2

    INGREDIENTS
    Water - 1 litre
    Spinach - 500 grams
    Onions - 50 grams
    Tomato - 50 grams
    Oil - 50 milliliters
    Garlic - 1 tablespoon
    Ginger - 1 tablespoon
    Green Chili - 1 tablespoon
    Black Cardamom - 1
    Cinnamon - 1
    Cloves - 4
    Paprika - 1 teaspoon
    Garam Masala - 1 teaspoon
    Salt - 1 tablespoon
    Paneer - 200 grams

    PREPARATION
    1. Take a pot, add 1 litre water and 500 grams spinach. Blanch into boiling water for 2 minutes.
    2. Place the spinach in a blender, add 50 grams onions, 50 grams tomato and blend into a fine paste to make a smooth spinach puree.
    3. Heat 50 milliliters of oil in a heavy pan. Add 1 tablespoon garlic, 1 tablespoon ginger, 1 tablespoon green chili, 1 black cardamom, 1 cinnamon, 4 cloves and stir.
    4. Add 1 teaspoon paprika, 1 teaspoon garam masala, 1 tablespoon salt ad stir for 2 - 3 minutes.
    5. Then add the spinach puree and stir. When the gravy comes to boil, add the paneer and mix well.
    6. Serve hot and enjoy.Watch Palak Paneer With HD Quality
