    Ingredients/Method
    2-3 tbsp Oil for cooking
    1 tsp cumin seeds
    1 small chopped onion
    1 tbsp minced garlic
    2 tsp curry powder
    2 small chopped tomatoes
    1/2 to 1 cup water
    400 ml Coconut milk ( 1 can)
    salt per taste
    1 tsp red chilli powder
    1 tsp turmeric
    2 cups chopped butternut squash
    2 cups of chickpeas ( uncooked and I soak these in water overnight)
    1 tsp dried fenugreek leaves ( kasoori methi)
    4-5 stalks of cilantro chopped ( for garnish)

    1. Soak chickpeas in water overnight (or atleast 2 hours) If you are using canned chickpeas then this step could be eliminated.
    2. In a hot pressure cooker, add oil and stir in onions, cumin seeds.
    3. Add Squash, salt, turmeric and chilli powder. Mix well. Add garlic minced.
    4. After few mins, add tomatoes and let them become tender.
    5. Add chickpeas ( discard water they were soaking in), curry powder and coconut milk.
    6. Add water as needed. Mix everything well and add dried fenugreek leaves.
    Cover the cooker and cook on high for a whistle. After 1 whistle, turn heat to medium and cook for another 3-4 whistles. Turn off the heat. Let cooker cool down then open, garnish with cilantro and serve with rice.

    Ingredients

    7-8 chicken drumsticks
    2 tbsp Oil for cooking
    1 tsp curry powder/chicken masala
    1 small roughly chopped onion
    1 tbsp ginger- garlic paste/or chopped ginger and garlic
    1 tsp cumin seeds
    1 tsp crushed coriander seeds ( or powder)
    1 tsp mustard seeds
    2 tomatoes or paste
    2 cups of water
    Spices used: salt, Turmeric and red chilli powder
    Fresh Cilantro leaves for garnish
    Adjust Salt per taste
    1 tsp red chilli powder
    1 tsp Turmeric
    1 tsp dried fenugreek leaves

    Method:

    - Heat oil in a pan and fry coriander/cumin/mustard for 30 secs.
    -- Add onions and mix well. Add ginger- garlic.
    - Add salt, turmeric and chilli powder. Cook for 2-3 mins.
    - Add chicken. Mix well. Cover and cook for 3-4 mins.
    - Add tomatoes. Combine well with other ingredients.
    - Add curry powder. Mix well. Fry for 5-6 mins.
    - Add water and let chicken cook until tender and no longer raw.
    - Add dried fenugreek leaves and cilantro. Mix well.
    - Serve with Roti/naan or rice.

ONE-POT COCONUT CHICKPEA CURRY

Yields: 4 Servings

INGREDIENTS
Oil - 50 milliliters
Garam masala - 2 teaspoons
Salt - 1 teaspoon
Cumin seeds - 1 teaspoon
Yellow onion - 1 small
Chili - 1 tablespoon
Minced garlic - 4 cloves
Chopped tomatoes - 300 grams
Canned chickpeas - 425 grams, drained
Coconut milk - 425 milliliters
Chopped cauliflower head - 1 small
Baby spinach - 140 grams
Lemon juice - 2 tablespoons
Coriander - 2 tablespoons

PREPARATION
1. Heat the oil in a heavy skillet or Dutch oven over medium heat. Add the onion and cook for about 10 minutes, browning the onion and letting it develop dark color, although without burning it. Stir in the garlic and cook for 2 minutes.
2. Add cumin seeds, garam masala, and chili, then stir.
3. Next, stir in the tomatoes, coconut milk, and cauliflower and simmer for 10 minutes.
4. Turn down the heat, then add chickpeas. Simmer for about 20 minutes, or until the chickpeas are tender and the sauce has reduced slightly.
5. Add the baby spinach and lemon juice. Taste and season with salt before adding coriander.
6. Serve immediately over rice, or let cool and refrigerate. The curry will hold up well in the refrigerator in an airtight container for up to 5 days.
