Ingredients/Method
1 cup vermicelli
2-4 tbsp oil
1/2 tsp hing/ asafoetida
1 tbsp dried curry leaves
1 tsp mustard seeds and 1 tsp cumin seeds
1 tsp chilli powder
2 tbsp grated ginger
1 small piece of onion chopped
Salt per taste
1 tsp Turmeric ( Haldi)
1/2 cup peas and 1 cup ribbon Carrot
1/4 cup Cashews
2 tbsp lemon juice
2 tbsp crushed peanuts ( roasted or unroasted)
Method:
- Boil vermicelli. Make sure that you put them in hot water. As soon as they are tender, run them under cold water. do not overcook or they will become mushy.
- Next in a pan, heat oil. When the oil is hot, add asafoetida, unroasted peanuts, mustard seeds and cumin . Give them 30 secs and add ginger and onion. Mix well.
- Add veggies and salt, chilli powder and Turmeric. Mix and cook until almost done.
- Add noodles. Mix well. Add lemon juice.
- Garnish with cashews and enjoy warm.

Ingredients/Method
1 cup chickpea flour / Besan
4 tbsp coconut oil
3/4 cup dry fruits ( crushed/powdered) and some for garnish
1/2 cup coconut sugar ( or regular)
1/2 cup water
Roast chickpea flour in oil until fragrant and a shade darker. Add sugar and mix well. Add fry fruit ad combine everything. Add water to form a dough. Spread evenly on parchment paper and put in the fridge for 30 mins.
Cut in desired shape and serve.

Recipe Details:
1-2 pods of Tamarind
3/4 cup of Water
2-4 tbsp Sugar
1/4 tsp Salt ( rock salt/ black salt works well)
1/2 tsp Roasted cumin powder
- Soak Tamarind in water for 15-20 mins. Then boil the mixture. Add other ingredients. Turn the heat off. Pass sauce through a strainer. Discard pulp and seeds. Store in an airtight container for upto a month.

Spicy Zucchini
Ingredients/Method
1 chopped Zucchini
2-3 tbsp Oil for cooking
1 tsp cumin seeds
1 tsp mustard seeds
1 dried red chilli
1 small chopped onion
1 tbsp grated ginger
1/2 can of tomato sauce
1 can of water ( adjust as per need)
salt per taste
1/2 tsp red chilli powder
1 tsp turmeric
4-5 stalks of cilantro chopped ( for garnish)
Method:
1. Heat oil and add cumin and mustard seeds. Let them sizzle for 30 secs.
2. Add dried red chilli, onions and ginger. Mix well.
3. AddZucchini. Mix in Salt, turmeric and red chilli powder.
4. Saute for few mins.
5. Add tomato sauce and water. Simmer until Zucchini is done.
6. Garnish with cilantro and serve.

250 gms pitted dates
2-4 tbsp coconut Oil
1 cup dry fruit
1/4 cup sesame seeds.
- Powder dry fruit or blend it to form coarse mixture. Chop up or blend dates as well. Fry them lightly with coconut oil and fill the dates paste with dry fruit after spreading dates evenly on a parchment paper. Roll the mixture. Sprinkle Sesame seeds on top and cut after everything has solidified in the fridge for few hours. Enjoy with a cup of tea.

1.5 cup Puffed rice
2 tbsp chopped onions
1/3 cup chopped tomatoes
2 tsp cilantro leaves
2 tsp green onions or green chilli if you like heat
1 tbsp Chana Dal/Split chickpea lentil
1 tsp mustard seeds
2 tbsp dried curry leaves
2-4 tbsp peanuts
2 tbsp oil for cooking
1/4 tsp salt
1/2 tsp Turmeric
1 tsp chaat masala
1/2 tsp rock salt
1 tbsp lemon juice
2-4 tsp tamarind sauce
Method:
1. In hot oil, fry chana dal with mustard seeds, peanuts and curry leaves. Add in salt and turmeric. Add rice and mix well.
2. Add rock salt and chaat masala
3. Mix in onions, tomatoes, cilantro and green onions. Mix well.
4. Add in lemon juice and tamarind sauce.
Toss everything together and serve warm with a cup of tea.. absolutely delicious.

4 tbsp Coconut Oil
1 tsp cumin seeds
1 tsp coriander seeds
400 gms Paneer (Indian Cottage Cheese)
1 chopped onion
3-4 tomatoes
2 tsp minced garlic
2-4 tbsp greek yogurt
1 tsp curry powder
1 tsp garam masala
1 bay leaf
salt to taste
1 tsp red chilli powder
3-4 green cardamom pods
6-7 cashews
1 tsp dried fenugreek leaves
Garnish: Cilantro leaves
Method:
1. Saute paneer piecesin coocnut oil and set aside once golden brown.
2. In same pan with a little bit more oil, add bay leaf.
3. Add in chopped onions and cashews. Next, add cumin, coriander, cardamom seeds, salt and chilli powder.
4. Mix well. Add minced garlic. Cook onions are golden brown and no longer raw.
5. Add in tomatoes. Once tomatoes are tender, blend all ingredients with a little bit of water. Remove the bay leaf though.
6. Pour curry in the pan. Add yogurt. Mix gently and add curry powder. Add paneer pieces. Let it all simmer for few mins.
7. Add garam masala. Finish off by adding kasoori methi ( dried fenugreek leaves) and cilantro leaves.
Serve with rice or roti.

1 tbsp lemon juice
2-4 tsp tamarind sauce
Method:
1. In hot oil, fry chana dal with mustard seeds, peanuts and curry leaves. Add in salt and turmeric. Add rice and mix well.
2. Add rock salt and chaat masala
3. Mix in onions, tomatoes, cilantro and green onions. Mix well.
4. Add in lemon juice and tamarind sauce.
Toss everything together and serve warm with a cup of tea.. absolutely delicious.

Ingredients/Method
1 cup vermicelli
2-4 tbsp oil
1/2 tsp hing/ asafoetida
1 tbsp dried curry leaves
1 tsp mustard seeds and 1 tsp cumin seeds
1 tsp chilli powder
2 tbsp grated ginger
1 small piece of onion chopped
Salt per taste
1 tsp Turmeric ( Haldi)
1/2 cup peas and 1 cup ribbon Carrot
1/4 cup Cashews
2 tbsp lemon juice
2 tbsp crushed peanuts ( roasted or unroasted)
Method:
- Boil vermicelli. Make sure that you put them in hot water. As soon as they are tender, run them under cold water. do not overcook or they will become mushy.
- Next in a pan, heat oil. When the oil is hot, add asafoetida, unroasted peanuts, mustard seeds and cumin . Give them 30 secs and add ginger and onion. Mix well.
- Add veggies and salt, chilli powder and Turmeric. Mix and cook until almost done.
- Add noodles. Mix well. Add lemon juice.
- Garnish with cashews and enjoy warm.

Ingredients/Method
1 cup chickpea flour / Besan
4 tbsp coconut oil
3/4 cup dry fruits ( crushed/powdered) and some for garnish
1/2 cup coconut sugar ( or regular)
1/2 cup water
Roast chickpea flour in oil until fragrant and a shade darker. Add sugar and mix well. Add fry fruit ad combine everything. Add water to form a dough. Spread evenly on parchment paper and put in the fridge for 30 mins.
Cut in desired shape and serve.

Recipe Details:
1-2 pods of Tamarind
3/4 cup of Water
2-4 tbsp Sugar
1/4 tsp Salt ( rock salt/ black salt works well)
1/2 tsp Roasted cumin powder
- Soak Tamarind in water for 15-20 mins. Then boil the mixture. Add other ingredients. Turn the heat off. Pass sauce through a strainer. Discard pulp and seeds. Store in an airtight container for upto a month.

Spicy Zucchini
Ingredients/Method
1 chopped Zucchini
2-3 tbsp Oil for cooking
1 tsp cumin seeds
1 tsp mustard seeds
1 dried red chilli
1 small chopped onion
1 tbsp grated ginger
1/2 can of tomato sauce
1 can of water ( adjust as per need)
salt per taste
1/2 tsp red chilli powder
1 tsp turmeric
4-5 stalks of cilantro chopped ( for garnish)
Method:
1. Heat oil and add cumin and mustard seeds. Let them sizzle for 30 secs.
2. Add dried red chilli, onions and ginger. Mix well.
3. AddZucchini. Mix in Salt, turmeric and red chilli powder.
4. Saute for few mins.
5. Add tomato sauce and water. Simmer until Zucchini is done.
6. Garnish with cilantro and serve.

Ingredients/Method
250 gms pitted dates
2-4 tbsp coconut Oil
1 cup dry fruit
1/4 cup sesame seeds.
- Powder dry fruit or blend it to form coarse mixture. Chop up or blend dates as well. Fry them lightly with coconut oil and fill the dates paste with dry fruit after spreading dates evenly on a parchment paper. Roll the mixture. Sprinkle Sesame seeds on top and cut after everything has solidified in the fridge for few hours. Enjoy with a cup of tea.
