Servings: 4-5 Glasses
INGREDIENTS
Mangoes chopped - 300 grams (3 cups)
Plain yogurt - 400 ml (1.75 cups)
Skim milk - 225 (1 cup)
Sugar - 1-2 teaspoon(s)
Ground cardamom - 1/4 teaspoon
Ice - 2 cubes
PREPARATION
1. Add chopped mangoes, plain yogurt, skim milk, sugar, ground cardamom, and ice in the blender and blend well for about 2 minutes.
2. Chill in the refrigerator for about an hour before serving.
3. Serve sprinkled with ground cardamom.

INGREDIENTS
Milk - 1 liter
Rice - 250 grams
Ground cardamom - 1 teaspoon
Sugar - 250 grams
Rose water - 1/2 teaspoon

Cashew - 50 grams
Saffron syrup - 1 tablespoon
Chopped almond - 50 grams
Chopped pistachio - 50 grams
PREPARATION
1. Rinse rice and then drain. Wipe the grains dry and then grind well in a grinder to a semi fine powder. Keep aside.
2. Heat milk in a pot on medium high. Once milk starts to boil, reduce the heat to medium low and add the rice flour and stir. Then add cardamom and sugar. Stir till sugar is completely dissolved.
3. Add rose water, raisin, cashew, and saffron syrup. Continuing stirring in intervals so that lumps are not formed.
4. Without covering the pan, cook for 5-6 minutes till the phirni thickens a little.
5. Turn off the heat and let it rest for a few minutes before serving.

PREPARATION
1. Heat oil (3 tbs) in a pan and add cumin with onion paste and stir for a few seconds.
2. Then add red chili powder, paprika, turmeric, garam masala, and salt, stir well.
3. Now add tomato sauce with dried fenugreek leaves. Stir again and let it simmer for 2 minutes before keeping it aside.
4. Heat oil (3 tbs) in a new pan. Once oil is heated, add coriander seeds, whole red chili, and chicken. Then stir a few times.
5. Add onion and bell pepper, stir for a few seconds before adding ginger, fresh coriander, and the prepared paste. Stir again.

4. Knead to a firm dough. cover the dough with a moistened napkin and keep aside for 30-40 minutes.

2. Slice tomatoes and onion into wedges and add in a bowl. Add garlic cloves and a whole chili before drizzling everything with olive oil. Season with salt and pepper.
3. Spread everything on a baking sheet in an even layer and roast in oven for 45 minutes on 175 degrees C.
4. After roasting, wait until it is at room temperature to blend. Place everything in the blender and blend until combined and smooth (blend for just a few seconds if you prefer chunky).
5. Heat heavy cream in a large stockpot and then pour pureed tomato mixture into stockpot. Stir in the vegetable or chicken stock and simmer for 15 minutes.
6. While the pot is simmering, chiffonade the fresh basil leaves and add it to the stockpot.
7. Season with salt and ground black pepper. Let it simmer for another 2 minutes.
8. Garnish with mozzarella cheese and serve with toasted slices of baguette bread.
