    Method:
    - Fry paneer cubes until golden brown and set aside. You can deep fry or pan fry paneer.

    1. Heat oil in a pan. Add cumin, cinnamon, cloves and bay leaf.
    2. Quickly stir.
    2. Add onions paste.
    3. Add salt, paprika and turmeric.
    4. Fry for 5-6 mins until raw flavour of ginger-garlic goes away and onions start changing color, start becoming golden brown.
    5. Add tomatoe puree . Cook until no longer raw. Add tomato paste. Add Green peas. Cook for 2-3 more mins.
    6. Add curry powder and quick for few more mins. Slowly add water as desired. Bring water to boil and let the curry simmer.
    7. Add garam masala, Kasoori methi (dried fenugreek leaves) and cilantro leaves.
    8. Mix in paneer. Cook for 2-3 mins and

    Paneer Manchurian is a quick and flavourful dish from Indo- Chinese Cuisine that you can easily prepare at home and enjoy on its own or with rice, noodles or even quinoa.
    Ingredients/ Method

    400 gms Paneer
    For marinading Paneer:
    2-3 tbsp corn starch
    1/2 tsp salt and red chilli powder ( or Paprika)
    1/2 tsp garlic powder
    2 tbsp Soy sauce and 1/4 cup water

    2- 4 tbsp oil
    1 onion
    2 tbsp each Ginger and garlic chopped
    1/2 tsp salt
    1 tsp Red chilli flakes
    2 tbsp Soy sauce
    2 tbsp vinegar
    1-2 cups green/red bell pepper
    2-3 sticks celery
    1 cup water + 1 tbsp corn starch ( mixed in 1 more cup of water) to make gravy

    Garnish: green onions chopped

    Method:
    - Cut Paneer into bite size pieces.
    - Mix all marinade spices and soak Paneer in the marinade for at least 10 mins. Longer the better.
    - Next when you are ready to cook, heat oil in a pan and fry paneer until golden brown and set aside.
    - In the same wok or another, heat oil and stir in Onions, ginger garlic, salt and chilli flakes. Let the onions become translucent. Mix in Celery. Add in bell peppers, vinegar and soy sauce. Stir fry for few more mins and then add water ( in which we have dissolved corn starch). Allow the water to evaporate. Paneer will become glossy and gravy will thicken up. Garnish with green onions and serve with rice, noodles or quinoa

    Coconut is one of my favourite flavours and i really enjoy preparing these coconut cookies for my family. They are a great treat with a cup of cold milk, Chai / Tea or coffee. Enjoy these cookies with friends/ family or bake them for your neighbors.
    1 cup flour ( all purpose or whole wheat or combiantion of the two)
    3/4 cup coconut shredded unsweetened
    1/2 cup chocolate chips
    1 tsp baking soda
    1/2 to 3/4 cup sugar of choice
    1/4 tsp salt
    1 egg
    2 drops of vanilla extract
    1/2 cup veg oil

    Combine sugar with oil and egg. Add in other ingredients. Mix to form cookie dough and bake at 350 F for 10-12 mins. Cookie dough could be firm up in fridge or simply form shapes of choice and enjoy the cookies.

    Ingredients/ Method

    For Fries:
    3-4 Potatoes of choice
    2-3 tbsp oil
    1/2 tsp salt
    Optional : 1/2 tsp Turmeric and 1/2 tsp Paprika or red chilli powder

    300 gms Chicken
    For marinade:
    1/4 cup Yogurt
    1/2 tsp salt
    1 tsp tandoori masala
    1/2 tsp Garlic powder and Paprika

    3-4 tbsp Butter or Desi Ghee
    1 thinly sliced onion
    1 bay leaf, 1 Cinnamon
    3-4 Green Cardamom
    1 tsp cumin and 1/2 tsp Coriander seeds
    4-5 Garlic pods - finely chopped and 2 inch piece ginger
    3-4 fresh tomatoes
    1/2 tsp salt/paprika
    1/2 cup Cream
    1/4 cup water

    Finishing off: 1/2 tsp Garam Masala
    1/2 tsp Dried Fenugreek leaves
    Chopped Cilantro and Green onions

    1 cup Grated Cheese ( I know I skipped on Cheese Curds and went with regular Mozarella and Cheddar Cheese)

    Method:
    Marinade Chicken for an hour in combination of yogurt and spices.
    Wash, peel and thinly slice potatoes and cook them to make fries. I pan fried them but they can also be baked or deep fried. Season them as per your choice. I made golden fries by using some turmeric and red chilli powder. Cook on medium high heat for 7-8 mins.
    Once potatoes are done, set them aside.

    Ingredients/ Method

    1. Caramelized Onion Hummus

    1 cup Chickpeas
    1 thinly sliced onion
    3 cloves
    2 tsp oil (Olive or another of your choice)
    3 tbsp Tahini Paste (Tahini can be made by roasted sesame seeds and making paste out of them with olive oil)
    3 tbsp lemon juice
    1/2 tsp salt and paprika

    For Almond Icecream
    1 cup Condensed Milk
    1/2 tsp Cardamom Powder
    1/2 to 1/4 cup Blanched Almonds

    Method:

    1. Put Almonds in a blender. Add Condensed milk and cardamom powder.
    4. Blend everything together and pour it in popsicle moulds, plastic cups or a container.

    Method:

    1. Put all the ingredients in a blender.
