Summer is here and so its time to enjoy summer treats like tasty homemade icecreams a.k.a Kulfi. One of my favourite Ice Cream flavours is Badam Kulfi - Almond Ice Cream. Let me know whats your favourite icecream flavour?

For Almond Icecream
1 cup Condensed Milk
1/2 tsp Cardamom Powder
1/2 to 1/4 cup Blanched Almonds

Method:

1. Put Almonds in a blender. Add Condensed milk and cardamom powder.
4. Blend everything together and pour it in popsicle moulds, plastic cups or a container.

    Method:

    Eggless Almond Cookies Recipe
    Makes 30 medium-sized cookies

    Ingrediants:

    Flour- 300 gms / 3 cup / 10.5 ounces
    Butter-200 gm
    Powdered Sugar-1 cup / 200 gms / 7 ounces
    Cashew powder-1/2 cup / 50 gms / 2 ounces
    Badam powder-1/2 cup / 50 gms / 2 ounces
    Baking powder-2 tsp
    Vanilla-2 tsp
    Cold Egg-1

    Method:

    Preheat the oven to 180°C(360°F)..

    In a mixing bowl beat together butter,sugar and vanilla till mixed.Add in egg and mix well.

    Now add in badam powder,cashew powder and mix well.

    Throw in the flour,baking powder and mix till it gets combined and forms a soft ball.

    Divide that in to equal size balls and arrange it on a well buttered baking tray.Stud each cookies with a badam piece.

    Put it in the oven and let it bake for 15-20 min or until golden brown.

    Remove it from the oven and let it cool in the wire rack for 30 min.

    Transfer it to a air tight container and enjoy it with a cup of tea.

    Ingredients/Method

    1 cup vermicelli
    2-4 tbsp oil
    1/2 tsp hing/ asafoetida
    1 tbsp dried curry leaves
    1 tsp mustard seeds and 1 tsp cumin seeds
    1 tsp chilli powder
    2 tbsp grated ginger
    1 small piece of onion chopped
    Salt per taste
    1 tsp Turmeric ( Haldi)
    1/2 cup peas and 1 cup ribbon Carrot
    1/4 cup Cashews
    2 tbsp lemon juice
    2 tbsp crushed peanuts ( roasted or unroasted)

    Method:
    - Boil vermicelli. Make sure that you put them in hot water. As soon as they are tender, run them under cold water. do not overcook or they will become mushy.
    - Next in a pan, heat oil. When the oil is hot, add asafoetida, unroasted peanuts, mustard seeds and cumin . Give them 30 secs and add ginger and onion. Mix well.
    - Add veggies and salt, chilli powder and Turmeric. Mix and cook until almost done.
    - Add noodles. Mix well. Add lemon juice.
    - Garnish with cashews and enjoy warm.

    Ingredients/Method

    1 cup chickpea flour / Besan
    4 tbsp coconut oil
    3/4 cup dry fruits ( crushed/powdered) and some for garnish
    1/2 cup coconut sugar ( or regular)
    1/2 cup water

    Roast chickpea flour in oil until fragrant and a shade darker. Add sugar and mix well. Add fry fruit ad combine everything. Add water to form a dough. Spread evenly on parchment paper and put in the fridge for 30 mins.
    Cut in desired shape and serve.
