    ഗുജറാത്ത് ഭരിച്ചിരുന്ന മെഹ്മൂഗ് ബെഗാദ രാജ്യത്ത് ഏറ്റവും കൂടുതല്‍ കാലം ചക്രവര്‍ത്തി പദത്തില്‍ ഇരുന്ന വ്യക്തിയാണെന്ന് ചരിത്ര രേഖകള്‍ പറയുന്നു.1458 മുതല്‍ 1511 വരെയാണ് ബെഗാദ ഗുജറാത്ത് ഭരിച്ചിരുന്നത്.ഭക്ഷണ പ്രിയനായിരുന്ന ബെഗാദിന്റെ ഭക്ഷണ ശീലത്തെ കുറിച്ച് പ്രചരിക്കുന്ന ചില വസ്തുതകളുണ്ട്.ദിനം പ്രതി 35 കിലോ ഭക്ഷണം രാജാവ് കഴിക്കുമെന്നാണ് പറയപ്പെടുന്ന കഥ.ഇതില്‍ തന്നെ ഒരു കപ്പ് തേനും വെണ്ണയും 100 പഴങ്ങളുമാണത്രെ പ്രഭാതത്തില്‍.ഉച്ചയ്ക്കും രാത്രിയും മുടങ്ങാതെ ഭക്ഷണം കഴിച്ചാലും രാത്രിയില്‍ വിശപ്പടക്കാന്‍ എന്തെങ്കിലും വിഭവം പാചകക്കാര്‍ ഒരുക്കിയിരുന്നുവത്രെ.ബെഗാദെയെ വിഷം നല്‍കി കൊല്ലാന്‍ ശ്രമം നടന്നിരുന്നതായും അത് തിരിച്ചറിഞ്ഞ രാജാവ് പിന്നിട് ഭക്ഷണത്തില്‍ നേരിയ തോതില്‍ വിഷം ചേര്ത്തി കഴിക്കുന്നത് പതിവാക്കി അതും വിഷത്തില്‍ നിന്നും ശരീരത്തെ പ്തിരോധിക്കാനായി.മെഹ്മൂദ് ഷാ ഒന്നാമനെന്നാണ് ബെഗാദ അറിയപ്പെട്ടത്.
    കാലങ്ങള്‍ക്കിപ്പുറം മെഹ്മൂദ് ബെഗാദയുടെ കഥകള്‍ കേള്‍ക്കുമ്പോള്‍ അവിശ്വസിനീയത പ്രകടിപ്പിക്കുന്നവരും കുറവല്ല.

    Ingredients/Method

    1 cup vermicelli
    2-4 tbsp oil
    1/2 tsp hing/ asafoetida
    1 tbsp dried curry leaves
    1 tsp mustard seeds and 1 tsp cumin seeds
    1 tsp chilli powder
    2 tbsp grated ginger
    1 small piece of onion chopped
    Salt per taste
    1 tsp Turmeric ( Haldi)
    1/2 cup peas and 1 cup ribbon Carrot
    1/4 cup Cashews
    2 tbsp lemon juice
    2 tbsp crushed peanuts ( roasted or unroasted)

    Method:
    - Boil vermicelli. Make sure that you put them in hot water. As soon as they are tender, run them under cold water. do not overcook or they will become mushy.
    - Next in a pan, heat oil. When the oil is hot, add asafoetida, unroasted peanuts, mustard seeds and cumin . Give them 30 secs and add ginger and onion. Mix well.
    - Add veggies and salt, chilli powder and Turmeric. Mix and cook until almost done.
    - Add noodles. Mix well. Add lemon juice.
    - Garnish with cashews and enjoy warm.

    Ingredients/Method

    1 cup chickpea flour / Besan
    4 tbsp coconut oil
    3/4 cup dry fruits ( crushed/powdered) and some for garnish
    1/2 cup coconut sugar ( or regular)
    1/2 cup water

    Roast chickpea flour in oil until fragrant and a shade darker. Add sugar and mix well. Add fry fruit ad combine everything. Add water to form a dough. Spread evenly on parchment paper and put in the fridge for 30 mins.
    Cut in desired shape and serve.
