Aloo Bhujia Sev has a different taste compared to all Namkeens. There are various ways to prepare Aloo Bhujia Sev namkeen, like

Aloo and gram flour mixed
Aloo, gramflour and Moth flour mixed
Aloo, gramflour and rice flour mixed
All Aloo Bhujia's have a distinct taste from one another, but the process used in making them is similar. You can make Aloo Bhujia Sev with the ingredients that are available to you. Today we will prepare Aloo Bhujia Sev with Aloo and gram flour mixed together.


Ingredients for Aloo Bhujia Sev Recipe

Gram flour(besan) - 200 grams (2 cup)
Potatoes - 400 grams ( 5-6 medium sized)
Salt - add to taste (3/4 tsp)
Turmeric powder - 1/4 tsp
Heeng(asafoetida) - 2 pinch
Garam masala - 1/2 tsp


How to make Aloo Bhujia Sev Namkeen

Boil the potatoes, peel and grate them.Filter gram flour and keep it in any utensil. Put grated potatoes, salt, Heeng, turmeric powder, Garam masala in the gram flour and knead to make a smooth dough. Cover this dough for 15-20 minutes allowing it to ferment.

Attach a fine net to the Sev making machine. Apply some oil on your hand, break of a guava sized piece form the dough the roll it length wise. Put this rolled dough in the machine and close it.

    Paranthas or Parathas is a kind of indian bread. They can either be made plain or stuffed with a vegetable mixture. Parathas are made from whole wheat flour. Stuffed Paranthas or Parathas is a very popular breakfast item in Punjab. In Punjab the parathas are made with lots of ghee and then served with dollops of white butter or makhan. White butter can be easily made at home.


    Ingredients for Aloo Paratha:

    Dough:

    cup whole-wheat flour

    1/2 cup water (Use more as needed)
    Pinch of salt
    Potato Filling

    medium potatoes

    1/4 teaspoon salt
    1/2 teaspoon cumin seeds (Jeera)
    1 chopped green chili
    2 tablespoons chopped cilantro (green coriander)
    1/2 teaspoon garam masala (optional)
    1/2 teaspoon amchoor powder (optional)

    Also needed

    1/4 cup whole-wheat flour for rolling
    Oil to cook


    How to make Aloo Paratha:

    Dough

    Mix flour, salt and water together to make soft dough (if the dough is hard add a little more water). I like mixing the dough by hand.
    Knead the dough for a few minutes on a lightly greased surface to make smooth and pliable dough.
    Set the dough aside and cover it with a damp cloth. Let the dough rest for at least ten minutes.

    How to make Dahi ke aloo

    Potatoes - 500 grams (6-7 medium sized)
    Curd - 200 grams ( 1 cup)
    Oil -1 to 2 tbsp
    Heeng(asafoetida) - 1 pinch
    Jeera(cumin seeds) - 1/2 tsp
    Turmeric powder - 1/4 tsp
    Coriander(dhaniya) powder - 1 tsp
    Gram flour(besan) - 2 tsp
    Red chilly powder - 1/4 tsp
    Green chilly - 1 to 2 (finely chopped)
    Salt - add to taste (1 tsp)
    Green coriander - 1/2 small bowl (finely chopped)


    How to make Dahi ke aloo

    Wash and put the potatoes in a cooker to boil After they cool down peel the potatoes and break them into fat pieces.

    Pour oil in a frying pan(kadhai) and heat, put Heeng and Jeera in hot oil. On ce Jeera is roasted add turmeric powder, coriander powder and gram flour. Gently stir fry these ingredients. Put potatoes and red chilly powder in the pan stir fry for another 2-3 minutes till potatoes are coated with spices all over. Pour 2-3 cups of water, cover the pan and cook the curry till it comes to boil.

    Take out curd from the fridge 30 minutes earlier then beat it.

    Ingredients for Aloo Tamatar Curry:

    1. Potatos 2 medium size skinned and cubed (I prefer to use white skin potatoes as they taste better)
    2. Tomatos 4 medium size chopped (Preferably tomatoes on the vein or plum kind)
    3. Red chili pwd 2 tbsp
    4. Turmeric 1/2 tsp
    5. Coriander leaves 2 tbsp chopped
    6. Red onion finely chopped
    7. Ginger-Garlic paste 1 1/2 tsp.
    8. Salt to taste.
    9. Oil 2 tbsp.


    How to make Aloo Tamatar Curry:

    1. Heat oil and add chopped onion, let it fry till translucent.
    2. Add ginger-garlic paste and fry for another 1 min, then add turmeric pwd followed by potato cubes, fry them for a while.
    3. Add chopped tomatoes with coriander leaves and salt.
    4. Put the lid and make the stove in between to simmer and medium flame. (If you are using a pressure cooker, then put it on medium flame for 2 whistles)
    5. Check it after 5 mins and see if the potato cubes are cooked ,then open the lid and cook for few more

    Aloo kachori is deep fried snack very much liked in northern India. This lip smacking snack is very spicy.

    Ingredients:

    1/2 kg Potatoes
    1 fresh grated coconut
    2-3 nos. Green chillies
    100 grams Arrowroot
    1 teaspoon Cardamom seeds
    1-2 tablespoons Lemon juice
    1-2 teaspoons Sugar
    As per requirement Salt


    How to make aloo kachori:

    Boil the potatoes and mash them.

    Add 50 gms arrowroot to the mashed potatoes and knead into firm dough. (This is used for outer covering of the Kachori. )

    Mix up the grated coconut with crushed green chillies, sugar, lemon, cardamom and salt to make the filling mixture.

    Take a small portion of the dough and press it between palms to make a small puri, stuff with coconut mixture and form into a ball. Repeat for the rest.

    Roll the balls in the remaining arrowroot and deep fry in hot oil till golden brown in colour. Serve hot with chutney

    200 gms potatoes200 gms.
    1 tblsp red chilli powder
    1 tblsp ginger paste
    salt to taste
    2 tblsp coriander powder
    1 tsp garam masala powder
    1 tblsp coriander seeds
    2 tblsp tomato puree
    100 gms coriander leaves
    1 tsp turmeric powder
    1 bay leaf



    How to make aloo mangodi :


    Cream curd, mix in besan and salt, red chilli powder, coriander powder and turmeric powder to it.
    Peel, wash and cut potatoes into 1 centimeter cubes.
    Keep aside in water.
    Dry roast mangodi on hot tawa until crunchy and slightly browned.
    Heat up oil, mix in brown bay leaf, cumin seeds, coriander seeds, whole red chillies and salt and cook.
    Mix in potatoes and stir fry stirring constantly until golden brown.
    Mix in ginger paste, mangodi, tomato puree and yogurt mixture, mix in 1 cup of water and mix well.
    Mix in garam masala powder and cut coriander leaves.
